Here is a wonderful, quick and delicious appetizer you can make for your next fiesta!\u00a0 The tamale balls can be made ahead and frozen \u2013 a great timesaver when you\u2019re stressed out in full blown party execution mode!<br \/>\nYou\u2019ll want to use cornbread that you bake in this recipe.\u00a0 Don\u2019t use boxed cornbread or dressing mix!\u00a0 Just quickly bake one of those envelopes of cornbread you find in the baking section.\u00a0 Hey &#8212; better yet\u2026bake\u00a0 a large batch of cornbread, crumble it and save it in your freezer!\u00a0 Be sure to take a look at my \u201cGrandma\u2019s Cast Iron Skillet Cornbread\u201d recipe!<\/p>\n<p>Ingredients:<\/p>\n<p style=\"padding-left: 30px;\">2 cups crumbled cornbread<br \/>\n10 oz. enchilada sauce (use canned or use the red sauce from your <a onclick=\"javascript:pageTracker._trackPageview('\/outgoing\/www.frillsandmeals.com\/wordpress\/2011\/01\/tamies-fiesta-chicken-enchiladas\/');\" title=\"Tamie\u2019s Fiesta Chicken Enchiladas\"  href=\"https:\/\/www.frillsandmeals.com\/wordpress\/2011\/01\/tamies-fiesta-chicken-enchiladas\/\" target=\"_blank\">chicken enchiladas<\/a>!)<br \/>\n\u00bd tsp. garlic salt<br \/>\n8 oz. tomato sauce<br \/>\n4 oz. Monterrey Jack or Fiesta Blend shredded cheese<br \/>\n1 \u00bd lb. ground beef<\/p>\n<p>1.\u00a0\u00a0\u00a0 Cook the ground beef.\u00a0 Salt and pepper to taste.<\/p>\n<p style=\"padding-left: 30px;\">2.\u00a0\u00a0\u00a0 Preheat oven to 350.<\/p>\n<p style=\"padding-left: 30px;\">3.\u00a0\u00a0\u00a0 Combine cornbread, \u00bd of the enchilada sauce, garlic salt and ground beef.\u00a0 Shape into 1 inch balls.<\/p>\n<p style=\"padding-left: 30px;\">4.\u00a0\u00a0\u00a0 Place in shallow baking pan and bake uncovered for about 20 minutes until done.<\/p>\n<p style=\"padding-left: 30px;\">5.\u00a0\u00a0\u00a0 Meantime, in a saucepan, heat tomato sauce and remaining enchilada sauce.\u00a0 Pour over meatballs in chafing dish and top with shredded cheese.\u00a0\u00a0 Melt cheese under a broiler if you need to.<\/p>\n<p style=\"padding-left: 30px;\">6.\u00a0\u00a0\u00a0 Serve on wooden picks.<\/p>\n<p>This makes about 80 tamale balls<\/p>\n","protected":false},"excerpt":{"rendered":"<p>When you are making the chicken enchiladas or stuffed pablano peppers, you almost always have some extra red sauce from those recipes.
