My mom made these for every bridge club and garden club party that she hosted. We\u2019ve carried on the tradition and serves these &#8220;fancy&#8221; pancakes at every celebration. They are so easy and simple and one of the first dishes I learned to cook. I\u2019m sure our future generations will learn to make our &#8220;fancy pancakes&#8221; and continue to pass it on for future generations!<\/p>\n<p>Ingredients:<\/p>\n<p>Crepes:<br \/>\n\u2022\u00a0\u00a0\u00a0 3 eggs<br \/>\n\u2022\u00a0\u00a0\u00a0 Pinch salt<br \/>\n\u2022\u00a0\u00a0\u00a0 \u00bc cup sugar<br \/>\n\u2022\u00a0\u00a0\u00a0 \u00bd tsp. vanilla<br \/>\n\u2022\u00a0\u00a0\u00a0 1 \u00bd cup milk<br \/>\n\u2022\u00a0\u00a0\u00a0 1 cup flour<br \/>\n\u2022\u00a0\u00a0\u00a0 2 tablespoons melted butter<br \/>\n\u2022\u00a0\u00a0\u00a0 Butter or cooking spray for skillet<\/p>\n<p>Filling:<br \/>\n\u2022\u00a0\u00a0\u00a0 8 ounces cream cheese softened<br \/>\n\u2022\u00a0\u00a0\u00a0 \u00bd stick butter softened<br \/>\n\u2022\u00a0\u00a0\u00a0 \u00bc cup sugar<br \/>\n\u2022\u00a0\u00a0\u00a0 1 \u00bd teaspoons vanilla<br \/>\n\u2022\u00a0\u00a0\u00a0 1 teaspoon grated lemon zest<\/p>\n<p>Sauce:<br \/>\n\u2022\u00a0\u00a0\u00a0 1 jar Smucker\u2019s Apricot preserves<br \/>\n\u2022\u00a0\u00a0\u00a0 1\/3 cup orange juice<br \/>\n\u2022\u00a0\u00a0\u00a0 1 tablespoon lemon juice<br \/>\n\u2022\u00a0\u00a0\u00a0 1 \u00bd teaspoons lemon zest<br \/>\n\u2022\u00a0\u00a0\u00a0 1 \u00bd\u00a0 teaspoons orange zest<br \/>\n\u2022\u00a0\u00a0\u00a0 2 tablespoons butter<\/p>\n<p>Slivered almonds<\/p>\n<p>Directions:<\/p>\n<p>For crepes:<br \/>\nIn a blender, mix eggs, salt, sugar, vanilla, milk, flour and melted butter.<\/p>\n<p>Butter or spray a skillet and heat.\u00a0 Make very thin pancakes by pouring \u00bc cup batter and swirl to coat bottom of skillet evenly.\u00a0 When sides of crepe are set, turn over and brown other side.\u00a0 Stack on a plate.<\/p>\n<p>For the filling, blend together cream cheese, butter, sugar, vanilla and lemon zest until smooth.<\/p>\n<p>Butter or spray a 9 x 11 casserole dish.\u00a0 Fill each pancake\/crepe with about 2 tablespoons of cream cheese filling.\u00a0 Roll crepes and place in bottom of casserole dish.<\/p>\n<p>For the sauce, in a saucepan heat Smucker\u2019s Apricot preserves, orange and lemon juice, lemon zest and butter until heated.\u00a0 Don\u2019t boil!\u00a0 Pour over crepes in casserole dish.<\/p>\n<p>Top with slivered almonds.<\/p>\n<p>Bake at 350\u00b0 for about 10 minutes or until bubbly.<\/p>\n<p>(NOTE: <em>If you want to be really fancy with this recipe, you can flamb\u00e9 it with either brandy or Grand Marnier.\u00a0 Keep the filled crepes in a copper skillet.\u00a0 Pour the sauce over the top and bake until bubbly.\u00a0\u00a0 Then pour \u00bc cup of the liquor on top and light!\u00a0 Take to the table to serve with a dramatic flair!<\/em>)<\/p>\n","protected":false},"excerpt":{"rendered":"<p>We&#8217;ve been eating these &#8220;fancy pancakes&#8221; for dessert for decades.
