{"id":94,"date":"2011-04-22T07:02:23","date_gmt":"2011-04-22T11:02:23","guid":{"rendered":"http:\/\/www.twosouthernsisters.com\/?p=94"},"modified":"2011-04-30T09:05:43","modified_gmt":"2011-04-30T13:05:43","slug":"broccoli-rice-and-mushroom-casserole","status":"publish","type":"post","link":"https:\/\/www.frillsandmeals.com\/wordpress\/2011\/04\/broccoli-rice-and-mushroom-casserole\/","title":{"rendered":"Broccoli Rice and Mushroom Casserole"},"content":{"rendered":"<p><span class=\"drop_cap\">M<\/span>y broccoli rice and mushroom casserole is always a hit at dinner.\u00a0 Whether I am entertaining at home or taking a casserole to a party or event &#8211; everyone always asks for this recipe.<\/p>\n<p>\u2022\u00a0\u00a0\u00a0 4 tablespoons butter, plus extra for casserole dish<br \/>\n\u2022\u00a0\u00a0\u00a0 4 tablespoons all-purpose flour<br \/>\n\u2022\u00a0\u00a0\u00a0 1\/2 pound baby bella mushrooms, sliced (about 2 cups)<br \/>\n\u2022\u00a0\u00a0\u00a0 1 small or medium onion, chopped<br \/>\n\u2022\u00a0\u00a0\u00a0 \u00be cups diced, fresh celery<br \/>\n\u2022\u00a0\u00a0\u00a0 2 cloves garlic, finely chopped<br \/>\n\u2022\u00a0\u00a0\u00a0 1\/2 teaspoon garlic powder<br \/>\n\u2022\u00a0\u00a0\u00a0 1\/2 teaspoon cayenne pepper<br \/>\n\u2022\u00a0\u00a0\u00a0 1 1\/2 cups heavy cream<br \/>\n\u2022\u00a0\u00a0\u00a0 1 \u00bd\u00a0 cups chicken stock<br \/>\n\u2022\u00a0\u00a0\u00a0 4 fresh broccoli crowns, steamed and rough chopped (or 1 packaged frozen broccoli, thawed and drained)<br \/>\n\u2022\u00a0\u00a0\u00a0 4 cups shredded Cheddar-Monterey blend<br \/>\n\u2022\u00a0\u00a0\u00a0 3 cups cooked rice<br \/>\n\u2022\u00a0\u00a0\u00a0 Salt and freshly ground black pepper<\/p>\n<p>Directions<br \/>\nPreheat oven to 425\u00b0 F.\u00a0 Butter the casserole dish.<\/p>\n<p>Steam the fresh broccoli and set aside.<\/p>\n<p>Make the rice per instructions.\u00a0 NOTE: I use instant rice but add chicken stock instead of water to give it extra flavor!<\/p>\n<p>In a large skillet, melt 4 tablespoons butter.\u00a0 Add the mushrooms, celery and onion and saut\u00e9 for about 4 minutes.\u00a0\u00a0 Sprinkle the flour over this mixture.\u00a0 Over medium to medium high heat, whisk together until golden in color. Cook until the flour browns.
